紫色马铃薯,又名紫土豆、黑土豆、黑马铃薯。外形呈长椭圆形,芽眼比较小,果皮呈黑紫色,乌黑发亮且带有光泽,果肉呈深紫色。除了具有普通马铃薯的营养成分外,最大的特点在于富含花青素,含量比普通马铃薯高很多,高达40mg/kg,吃上一个,就等于吃了20个奇异果,40个苹果!

    Directions

    Step 1

    将紫色马铃薯去皮切片蒸软,取出压成泥,加入粉搓成长条形,再切割成小粒搓成圆形,用拇指往中间轻压形成算盘子形状。Steam the purple potato with peeled slices, take it out and press it into puree, add flour and knead it into a strip, then cut into small pieces and knead into a circle. Use your thumb to gently press in the middle to form an SUAN PAN ZI shape.

    Step 2

    煮一锅热水,把算盘子放入煮至浮起,即可捞出过冷水备用。Boil a pot of hot water, put the SUAN PAN ZI into the boil until floats, remove and rinse under cold water, drain for later use.

    Step 3

    锅中放适量油,爆香蒜蓉与虾米,接着加入花肉、香菇丝与木耳炒香。Put some oil in the pot to saute garlic and dried shrimps, then add the pork, shiitake mushrooms and fungus saute until fragrant.

    Step 4

    加入调味料和适量水焖煮片刻。最后放入算盘子和芹菜拌炒均匀即可。Add seasonings and appropriate amount of water simmer for a while. Put the SUAN PAN ZI and celery stir-fry evenly, done.
